Enzo Minopoli, Tuscan Chef, Resident & Conductor of Private Food & Wine Tours of Chianti (For Ages 18 & Up) FEATURED CHEF. DEMONSTRATION. Enzo’s enchantment with all things Tuscan began when he moved to the region with his family at the age of 11. Afternoons spent in his mother’s delicatessen furthered his interest in the regional food and when he was old enough, he applied to the renowned culinary institute at Montecatini.His training continued in the USA but he was drawn back to Italy to chef at Palazzo Belmonte in Southern Italy where he advanced his knowledge of wine by taking an advanced sommelier’s course. The arrival of his first daughter sparked a yearning to return to the place where he felt most at home. Enzo and his growing family now reside in a medieval village in Chianti where with his passion for the culinary delights of Tuscany he offers cooking classes and specialized tours of the region. Central Market's great friend, and well known local cheesemaker, Paula Lambert met the Chef on one of her recent trips to Italy and was so impressed that she invited him to spend time in Texas. Trusting her judgment, and his reputation, we've asked him to share some of the iconic recipes of the region with you. Menu includes:
Trio of Bruschette: Braised Radiccio, Onions, Pine Nuts & Pecorino; Aromatic Ricotta, Cripsy Pancetta & Arugula; and Sauteed Cavolo Nero (Tuscan Kale), Creamed Cannellini Beans with Chiles & New Crop Tuscan Olive Oil;
Tuscan Mushroom Soup; Marinated Pork Medallions with Chianti Wine, Bay Leaf & Lemon Artichokes; and
Chocolate Ravioli filled with Pear & Ricotta, served with Berry Sauce.
